Polpettone di salmone

E continuando con le preparazioni degli antipasti delle feste ecco la novità di questo Natale.... usando la ricetta postata ieri  ho provato la versione con il salmone... e il risultato è stato sorprendente... c'è chi lo ha addirittura preferito all'originale!!!!

POLPETTONE DI SALMONE

Essendo un vero e proprio esperimento ne ho preparato solo uno lungo circa 20 cm.. ecco le dosi:
160 gr salmone affumicato in scatola (scolato dall'olio)... secondo me va benissimo anche quello fresco affumicato.. ma in casa avevo solo quello in scatola....
1 uovo
30 gr grana grattugiato
1-2 cucchiai di pane grattugiato

Per la preparazione e i modi e tempi di cottura potete guardare ancora qui.. sono identici!!!
Nelle foto li vedete insieme... così il rosa del salmone si nota ancora di più :-D



E visto che il salmone è tipico delle feste ho pensato di partecipare a questi contest...

POLPETTONE DI SALMONE

As a real experiment I prepared only one about 20 cm long .. here are the doses:

160 g smoked salmon, canned (drained oil) ... I think that fresh smoked one is fine too, but at home I only had one in the can....
1 egg
30 g grated Parmesan cheese
1-2 tablespoons of breadcrumbs

For the preparation and cooking times and ways you can still look here .. they are identical!
In the photos you see them together ... so the colour of salmon is more evident :-D

Polpettone di tonno

In ogni festa e buffet tutti mi chiedono di portarlo e chi lo assaggia mi chiede la ricetta...
Fino a qualche giorno fa non esisteva... il polpettone di tonno è una di quelle ricette che mi ha insegnato mia mamma... con dosi rigorosamente ad occhio (o meglio a naso...) Finalmente mi sono decisa a pesare gli ingredienti durante la preparazione... ed eccolo qui per voi....

POLPETTONE DI TONNO
(queste dosi sono per un antipasto per circa 15 persone)


500 gr di tonno in scatola (scolato dell'olio)
3 uova
80 gr circa grana grattugiato
25 gr circa pane grattugiato
carta forno e alluminio


Scolare bene il tonno in una terrina e schiacciare bene fino a creare un impasto omogeneo (io ho usato la forchetta ma penso sia più veloce con un mixer).
Unire le uova e continuando a mescolare aggiungere il grana e il pane grattugiati.
Con l'impasto ottenuto creare dei piccoli polpettoni (con queste dosi io ne ho fatti 4 di circa 17 cm.) sulla carta forno e procedere all'incartamento: ogni polpettone deve essere fasciato ben stretto da un rettangolo di carta forno e successivamente da 2 di alluminio.
A questo punto metterli in una pentola di acqua già bollente e lasciarli cuocere per circa 45 minuti.
Appena saranno tiepidi tagliarli a fettine... è ottimo tiepido ma ancora meglio freddo e guarnito con maionese :-)

In every party and buffet everyone asks me to take it and whoever tastes it asks me the recipe ...
Until a few days ago there was no recipe... this kind of "tuna-loaf" is one of those recipes that my mom taught me ... strictly dose to the eye (or nose better ...)
 Finally I decided to weigh all the ingredients in the preparation ... and here the recipe for you

POLPETTONE DI TONNO
(for about 15 people)
500 gr. of canned tuna (drained of its oil)
3 eggs
Approximately 80 g grated Parmesan cheese
Approximately 25 g breadcrumbs
baking paper and aluminum

Drain well the tuna in a bowl and mash well up to create a smooth paste (I used a fork, but I think it's faster with a mixer).
Add the eggs and keep stirring add the grated cheese and bread.
With the mixture create small loafs (with these doses I've made 4 of around 17 cm.) on baking paper and proceed to the wrap: each loaf must be wrapped tightly by a rectangle of baking paper and then by 2 of aluminum.
At this point, put them in a pot of water already boiling and cook for about 45 minutes.
As soon as they're warm slice them ... (Warm is good but they are even better cold) and garnished as you prefer... for example with mayonnaise :-)

Spiedini di polenta e speck

In questo periodo sono rimbalzata da una tavola all'altra... e ora sono alle prese con la progettazione del cenone di capodanno... con due mie amiche stiamo pensando ad un menu-buffet visto che saremo davvero tanti.... e a proposito di buffet mi è venuto in mente una cosa che avevo preparato qualche giorno prima delle feste.... come sempre ricetta velocissima ma molto gustosa!!!!

SPIEDINI DI POLENTA E SPECK

Per la polenta (non posso essere precisa perchè vado sempre ad occhio...)
200 gr. circa di farina per polenta
400 ml circa di acqua bollente salata

Per comporre gli spiedini:
100 gr. speck a fettine
100 gr. fontina

Preparare la polenta e far raffreddare creando possibilmente un rettangolo. Creare dei cubi e tagliarli a metà. Farcire con la fontina e avvolgere ogni "panino" di polenta con le fettine di speck.
Far scaldare il tutto al forno fino a far fondere il formaggio e comporre gli spiedini. Sono ottimi caldi :-D

SPIEDINI DI POLENTA E SPECK

For the polenta (I can not be precise because I didn't use balance ...)
200 grsome flour for polenta (corn flour)
400 ml of boiling salted water

To make the kebabs:
100 gr. sliced ​​bacon
100 grfontina cheese

Prepare polenta and let cool possibly creating a rectangleCreate cubes and cut them in half. Stuffed with fontina cheese and wrap each "sandwich" of polenta with slices of bacon.
Warm in the oven to melt the cheese and make the "kebabs"They're great hot :-D

Torta con ricotta e arancia

Ispirata dal contest di COOKINGMOVIES  &  COOKTHELOOK   ecco un'altra ricetta (sempre rigorosamente improvvisata....) che profuma di arance ed è perfetta per questo periodo dell'anno...



TORTA CON RICOTTA E ARANCIA

200 gr ricotta
2 uova
200 gr zucchero
200 gr farina per dolci con lievito
35 gr. burro (ammorbidito a temperatura ambiente)
35 gr. latte a temperatura ambiente
35 gr. spremuta arancia
buccia grattugiata dell'arancia

Mescolare zucchero e ricotta con lo sbattitore elettrico fino a quando non avrete ottenuto una crema omogenea. Aggiungere il burro e le uova possibilmente uno alla volta, continuando a mescolare.
Aggiungere il latte, il succo e la buccia dell'arancia e per ultima la farina con il lievito.
Una volta amalgamati tutti gli ingredienti versare l'impasto in una teglia e infornare a 180° per circa 40-45 minuti (io faccio la prova dello stecchino per vedere quando è pronta...).
Che profumo meraviglioso in tutta la cucina.... sto già pensando ad altre varianti.... A presto :-D

TORTA CON RICOTTA E ARANCIA

200 g cottage cheese
2 eggs
200 g sugar
200 g flour with baking powder
35 grbutter (softened at room temperature)
35 grmilk at room temperature
35 grorange juice
grated orange peel

Mix sugar and ricotta cheese with electric mixer until you obtain a smooth creamAdd butter and eggs possibly one at a time, stirring constantly.
Add milk, orange juice and peel, and lastly the flour with the baking powder.
Once you have all the ingredients well-blended pour the mixture into a baking dish and bake at 180 degrees for about 40-45 minutes (I do the "toothpick test" to see if it's ready...).
What a wonderful aroma throughout the kitchen .... I'm already thinking about other options 
....

Tegole "sbagliate"

Ecco la ricetta che ho realizzato per utilizzare gli albumi avanzati dalla preparazione del birramisù....
In realtà volevo fare una specie di brutti ma buoni ma come sempre mi manca qualche ingrediente... così mi sono trovata ad improvvisare.... il risultato mi ha ricordato vagamente le tegole valdostane :-)


TEGOLE "SBAGLIATE"

100 gr albumi
100 gr.farina
100 gr. zucchero
100 gr.burro
100 gr nocciole tritate (io non ne avevo abbastanza così ho integrato il peso mancante delle nocciole con le gocce di cioccolato)

Sbattere il burro con lo zucchero, aggiungere gli albumi (non montati), la farina e per ultimo le nocciole tritate (e il cioccolato se fate come me).
Formate dei mucchietti distanziati tra loro (in cottura si appiattiscono) su una teglia foderata di carta forno e cuocere a 180° per circa 15-20 minuti (sono pronti appena risultano piuttosto asciutti).

This is the recipe that I made to use the egg whites remained from the preparation of birramisù ....
Actually I wanted to do a kind of famous Italian biscuits called "ugly but good" but as always I was missing some ingredients ... so let's improvising .... the result reminded me vaguely a kind of biscuits from Aosta Valley called "tiles" (as remind roof tiles)



    TEGOLE "SBAGLIATE"


100 g egg whites
100 gr. flour
100 gr. sugar
100 gr. butter
100 g chopped nuts (I didn't have enough so I use also chocolate chips
)

Beat butter with sugar, add egg whites (not fitted), the flour and finally the chopped nuts (and chocolate if you like me).
Formed of spaced piles (flatten during cookingon a baking sheet lined with parchment paper and bake at 180 degrees for about 15-20 minutes (they are quiteready when dry).

Lussekatter

I tempi dell'università sono piuttosto lontani quindi mi rimane molto poco del "Jag har studerat Svenska" ecc... :-( ma ho deciso, prima o poi riprendo i libri e faccio un mega-ripasso!!
E dopo aver studiato lo svedese e la letteratura di tutto il nord Europa (che io amo) qualche anno fa finalmente sono stata a Stoccolma... e nel periodo magico, proprio per S.Lucia!!!! Purtroppo non ha nevicato, sarebbe stato ancora più "tipico", ma alla fine meglio così per due camminatori "folli"!!!


Ovviamente girando tra le bancarelle dei mercatini non potevamo non assaggiare i famosi Lussekatter (o Lussebulle) o panini svedesi allo zafferano... il nome, che viene tradotto come "gatti di S.Lucia", secondo una leggenda sembra far riferimento a Lucifero che con le sembianze di gatto cercava di confondere dei bambini mentre Gesù (con le sembianze di un bambino) distribuiva loro queste brioscine che grazie al colore acceso proteggevano dall'oscurità del male.
Ecco perchè, durante il giorno di S.Lucia ci sono così tanti cortei di bambini vestiti di bianco che portano queste brioscine cantando!
Il profumo di queste brioscine è particolare ma è uno degli aromi che associo di più a quel viaggio... ovviamente quelle mangiate lì erano molto più buone e profumate... prossima volta ;-D

LUSSEKATTER

350 gr farina (io ho usato 250 gr di farina 00 e 100 gr di manitoba)... potrebbe servirne un pochino di più alla fine se l'impasto risulta appiccicoso
100 gr zucchero
125 ml di latte
12 gr di lievito di birra (da sciogliere in qualche cucchiaio d'acqua con mezzo cucchiaino di zucchero)
60 gr. burro
1/2 bustina di zafferano
1 uovo (meno un po' di tuorlo che servirà con un po' di latte per spennellare i panini)
cioccolato fondente (la ricetta originale prevede l'uvetta ma qui è odiata... quindi ho improvvisato)

Sciogliere il burro e poi unirlo al latte, una volta tiepidi unire lo zafferano. 
Versare tutto in una ciotola e continuando a mescolare unire un po’di farina fino ad ottenere una pastella densa ed omogenea. Aggiungere il lievito sciolto nell'acqua e lo zucchero, l’uovo, la restante farina e continuare ad impastare.
Lasciare lievitare fino a quando il volume non sarà raddoppiato (1 ora e mezza o 2). 
A questo punto lavorare brevemente l'impasto e formare delle "S" arrotolando le estremità a spirale (con queste dosi a me sono venuti circa 12 dolcetti), disporli in una teglia, infilare un pezzetto di cioccolato al centro delle spirali e far lievitare coperti finchè raddoppiano. 
Spennellare i panini con l’uovo (e/o il latte) sbattuto ed infornarli a 180° per circa 20-30 minuti (fino a quando saranno dorati). 

Visto il clima natalizio....

Unfortunately it didn't snow, it would have been even more "typical", but in the end it was better in this way for two hikers very "crazy"!


Obviously, running between Christmas market stalls we could taste the famous Lussekatter (or Lussebulle) or Swedish saffron buns ... their name, which can be translated as "St.Lucia cats", according to a legend seems to refer to Lucifer that in the guise of cat was trying to confuse children as Jesus (in the guise of a child) was distributing them these buns to protect them from the darkness of evil thanks to the bright color of saffron.
That's the reason why, during the days of St. Lucia there are so many processions of children dressed in white carrying these buns singingThe scent of these buns is special but it is one of the flavors that I associate more on that trip ... Obviously thore were better than mine... Next time I'll'improve myself ;-D

LUSSEKATTER

350 gr flour (I used 250 gr of flour 00 and 100 gr of Manitoba) ... you may need a little more in the end if the dough is sticky
100 gr sugar
125 ml of milk
12 gr of yeast (dissolved in a few tablespoons of water with half a teaspoon of sugar)
60 gr. butter
1 / 2 sachet of saffron
1 egg (a bit of yolk will serve with a little of milk for brushing the buns)
dark chocolate (the original recipe includes raisins but here they are hated ... so I improvised)
Melt the butter and then add it to milk, when warm add the saffron.
Pour into a bowl and keeping stirring add a bit of flour until everything is homogeneous. Add yeast dissolved in water and sugar, egg, remaining flour and continue mixing
Let rise until it will be doubled in volume (about 1 hour and a half or 2).
Then work the dough briefly and form some "S" rolling spiral ends (with these doses I made about 12 buns), arrange them in a pan, slide a piece of chocolate in the center of the spiral and allow to rise covered until doubled.
Brush the buns with the egg (and / or milk) and bake at 180 ° for about 20-30 minutes (until they are golden).

Birramisù



Lo scorso weekend sono andata a trovare (dopo tantissimo tempo) una mia amica nel suo locale... un bellissimo pub dove la cucina è eccezionale e puoi abbinare ogni piatto alla birra giusta :-)
Inutile dire che abbiamo mangiato benissimo ma la vera sorpresa è stato il dolce... il birramisù!!!!!
Ho provato a replicarlo, non è venuto male ma purtroppo il mio risultato è stato solo un lontano ricordo di quella meraviglia.... ma non mi arrendo, ho già in mente la prossima versione ;-)


                                                                                                    
400 gr mascarpone
100 gr. panna da montare
5 tuorli
5 cucchiai di zucchero
200 gr. di savoiardi
birra scura per bagnare i savoiardi
(io ho usato 1 guinness in lattina... la prossima volta userò una meno leggera.... nell'originale il gusto della birra si sentiva di più)
cacao amaro




Per questa versione ho voluto omettere gli albumi (che ho usato per fare dei biscotti che vedrete prossimamente...). Sciogliere lo zucchero con 2 o 3 cucchiai d'acqua in un pentolino finchè non bolle e aggiungere ai tuorli già montati in precedenza. Unire il mascarpone continuando a sbattere e la panna montata per ultima.
A questo punto la crema è pronta, bagnare i savoiardi nella birra e comporre gli strati e decorare con il cacao amaro.

Last weekend I visited (after a very long timemy friend in her beautiful pub where food is exceptional and you can combine each dish with the right beer :-)
Needless to say we ate very well but the real surprise was the cake ... birramisù !!!!!
I tried to replicate it, for the first time it came not bad but unfortunately my result was just a distant memory of that wonder .... but I don't give upI'm thinking about next version ;-)
                                                                                                      
                                                                                                       

400 g mascarpone
100 grwhipping cream
5 egg yolks
5 tablespoons of sugar
200 grof biscuits (as Savoiardi)
stout beer to wet biscuits

(I used 1 can of Guinness ... next time I'll use another one stronger... this was lighter than the original)
cocoa







For this version I wanted to omit the egg whites (I used them to make biscuits you'll see soon ...). Dissolve the sugar with 2 or 3 tablespoons of water in a pot until it boils and add it to the yolks already mounted previously. Add mascarpone and continue to beat adding at last the whipped cream.
At this point, the cream is readydip the biscuits in beer and compose the layers and decorate with cocoa.

Fagottini ai funghi

In questi giorni di ponte pensavo di avere un po' più tempo da dedicare alla cucina... nella realtà sono sempre in giro quindi in attesa di un dolce insolito e sorprendente che spero di realizzare tra oggi e domani vi posto un'idea veloce (come sempre... :-P) per un aperitivo o per gli antipasti nelle prossime feste !! A prestissimo :-D



FAGOTTINI AI FUNGHI

1 confezione di pasta sfoglia
200 gr funghi champignon
1 noce di burro
1 o 2 cucchiai di besciamella
formaggio a scelta (io ho usato un pezzetto di formaggio tipo emmental tagliato a dadini)
sale, pepe, prezzemolo

Pulire i funghi, tagliarli a fettine sottili e cuocerli in una padella antiaderente con la noce di burro. Aggiustare di sale e pepe e a fine cottura aggiungere la besciamella, il prezzemolo e il formaggio.
Comporre i fagottini con i quadrati di pasta sfoglia e infornare fino a quando non saranno dorati.

FAGOTTINI AI FUNGHI

1 roll of puff pastry
200 gr mushrooms
1 knob of butter
1 or 2 tablespoons of bechamel sauce
cheese of your choice (I used a piece of Emmental cheese cut into cubes)
salt, pepper, parsley

Clean the mushrooms, cut into thin slices and cook in a pan with butter. Add salt and pepper and when cooked, add bechamel sauce, parsley 
and cheese.
Arrange "bundles" with squares of puff pastry and bake until they are golden brown

Cheesecake al mandarino

Mamma mia che buoni i mandarini, in particolare le clementine!!!!
E visto che l'esperimento cheesecake con la zucca era andato bene... perchè non buttarsi anche sui mandarini??
Devo dire che alla fine il gusto del mandarino si è sentito poco, quindi l'ho infilato pure nella decorazione... il risultato è stato ottimo!!!!!!

CHEESECAKE AL MANDARINO

250 gr. philadelphia
2 uova
3 mandarini (solo succo... dopo la cottura si sente appena... la prossima volta aumento le dosi o provo ad aggiungere la buccia grattugiata)
50 gr. zucchero di canna (anche meno)
gocce di cioccolato (a piacere)
cioccolato fondente e spicchi di mandarino per guarnire

Per il fondo
100 gr biscotti digestive
60 gr.burro
1 cucchiaio scarso di zucchero di canna



Preparare il fondo: tritare nel mixer i biscotti e lo zucchero e aggiungete il burro fuso amalgamando il tutto.
Una volta pronto ricoprite una teglia foderata con carta forno pressando bene il composto sul fondo e conservate in frigorifero per 20-30 minuti, mentre preparate il resto della torta.
Sbattere i tuorli con lo zucchero e a parte montare a neve gli albumi che aggiungerete alla fine.
Amalgamare la philadelphia continuando a sbattere (io ho usato lo sbattitore elettrico) fino ad ottenere un impasto omogeneo e piuttosto spumoso.
Unire il succo dei mandarini, gli albumi facendo attenzione a non smontare il tutto.
Versare l'impasto liscio ed omogeneo nella teglia con il fondo di biscotti , a piacere versare le gocce di cioccolato e infornare a 180° per 50- 60 minuti circa. 
A fine cottura lasciar raffreddare in forno spento e conservare in frigorifero 
Decorare a piacere al momento di servire.

OMG how good are mandarins, clementines in particular!!
As the experiment with pumpkin cheesecake was a success ...  why not "jump" on the mandarins?
I must say that at the end of the taste of mandarin was really light, so I use them also in the decoration ... the result was great !!!

CHEESECAKE AL MANDARINO

250 grphiladelphia
2 eggs
3 mandarins (Juice only...  next time I'll try to increase the dose or add the grated rind)
50 gr. brown sugar (less)
chocolate chips (to taste)
dark chocolate and mandarin slices for garnish

For the bottom
100 g digestive biscuits
60 gr. butter
1 tablespoon of brown sugar


Prepare the bottom: crush the biscuits and the sugar in a mixer and add melted butter, mixing it all.
Once ready put it in a baking tin with a baking paper sheet lined on the bottom, then press the mixture well and refrigerate for 20-30 minutes while you prepare the rest of the cake.
Beat the yolks with the sugar and in another container whisk the egg whites.
Mix the Philadelphia continuing to beat (I used the electric mixer) until dough is smooth and a bit fluffy.
Add the juice of the mandarin, egg whites, being careful not to remove the whole.
Pour the mixture smooth and homogeneous in the pan with the bottom of cookies (if you want add some chocolate chips) and bake at 180 degrees for 50 to 60 minutes.
When cooked, allow to cool off in the oven and then refrigerate.
Decorate to taste before serving.

"Finti" Cookies al caffè

Continuando la serie delle ricette "finte".... Di solito uso lo yogurt per le torte... ieri ho avuto un'illuminazione e ho pensato: perchè non usarlo per i biscotti?? E visto che a casa avevo le gocce di cioccolato per provare a fare i cookies ecco un mix...


"FINTI" COOKIES AL CAFFE'


Dosi per circa 20 biscotti:
1 vasetto di yogurt intero al caffè (115 gr)
100 gr. di zucchero
250 gr farina (io ne avevo poca, così ho usato 150 gr di farina 00 e 100gr farina con lievito... forse per avere la consistenza tipica dei biscotti è meglio utilizzare solo quella senza lievito)
50 gr farina mandorle
1 uovo
50 gr burro fuso
gocce di cioccolato (io ne ho messo circa 50 gr.. la prossima volta aumento le dosi!)
pizzico di sale

Sbattere l'uovo con lo zucchero, lo yogurt e il sale. Unire le farine e il burro fuso e freddo e impastare rapidamente fino a rendere il tutto ben omogeneo (se serve fate raffreddare un pochino l'impasto in frigorifero). 
Unire gocce di cioccolato a piacere e stendere l'impasto con il matterello a uno spessore di 1/2 cm. 
Ritagliatevi biscotti utilizzando un bicchiere e disponeteli su una placca foderata con carta da forno. Fateli cuocere 15- 20 minuti in forno preriscaldato a 180 °C. Togliete dal forno e lasciate raffreddare.

PS: Visto che lo yogurt al caffè sapeva poco di caffè ho decorato con una glassa-caramello al caffè (ho fatto bollire un po' d'acqua con mezzo cucchiaio di caffè solubile e qualche cucchiaiata di zucchero a velo... che bontà, la userò sicuramente di nuovo!)

FINTI COOKIES AL CAFFE'

Ingredients for about 20 biscuits:
1 jar of coffee yogurt (115 gr.)
100 grof sugar
250 gf of flour (I haven't enough flour 00... so I used 150 gr. of flour 00 and 100gr of flour with baking powder ... maybe to have the typical consistency of cookies it's better to use just the one without baking powder)
50 gr. almond flour
1 egg
50 g melted butter
chocolate chips (I have put about 50 gr ..  next time I'll increase the dose!)
pinch of salt

Beat the egg with the sugaryogurt and saltCombine flour and melted butter and mix rapidly to make it very smooth (if you need to cool the dough, put it  in the fridge for a moment).
Combine chocolate chips and roll out the dough with to a thickness of about 1 / 2 cm.
Form the biscuits using a glass and place them on a baking tray lined with baking paperCook in a preheated oven at 180 ° C for about 15.20 minutes. Remove from oven and let cool.

PSSince yogurt has a only a little coffee flavour I thought to decorate cookies with a sort of  coffee-caramel frosting (boiled a bit of water with half a tablespoon of instant coffee and a few spoons of icing sugar ... what a goodness, surely I will use it again!)
