Vellutata di carote e cavolfiore

Con questo freddo alla sera, quando finalmente si rientra a casa, una delle cose che preferisco mangiare a cena sono le zuppe & c... Sono veloci da fare e ti scaldano il cuore.... Ieri sera primo tentativo di vellutata con quello che avevo nel frigo.. fantastico perchè il risultato è stato buonissimo e anche molto light.. non ci credevo!!!!

VELLUTATA DI CAROTE E CAVOLFIORE

3 carote
stesso peso di cavolfiore
1 cipollotto fresco piuttosto grande
sale, paprika e pochissimo olio evo
noci sbucciate a piacere

Sbucciare, lavare e tagliare a pezzetti le verdure, metterle in una pentola e coprirle d'acqua . Cuocere aggiustando di sale e quando sono cotte frullare tutto con il minipimer. A piacere aggiungere paprika, pochissimo olio evo e qualche noce sbucciata (le noci e l'olio si possono benissimo omettere).
Prontissima e buonissima davvero!!!!

With this cold at eveningwhen I finally come homeone of my favorite things to eat for dinner is soups & c. .. They are quick to make and they warm the heart .... Last night was my first attempt to creams with what I had in the fridge .. it was great because the result was delicious and  very light.. incredible!!

VELLUTATA DI CAROTE E CAVOLFIORE

3 carrots
same weight of cauliflower
1 fairly large fresh onion
salt, paprika and very little olive oil
shelled nuts to taste

Peel, wash and slice the vegetablesput them in a pot and cover with water. Cook, salt and 
when they are cooked whisk with a blender to make a cream. If you wish, add paprika, some oil and few walnuts (nuts and olive oil may well be omitted).
Very ready and very good indeed!!

Torta francescana

Con queste giornate fredde e grigie per combattere la tristezza il comfort food è INDISPENSABILE... girando per i blog mi è capitato di vedere il contest di Molino Chiavazza



e mi sono detta... la torta di mele della mamma !!!!!
Questa ricetta semplicissima è tratta da un libro di ricette vecchissimo (non ricordo il nome) ed è una delle torte che più mi ricorda l'infanzia... è la torta che mia mamma ci preparava spesso per la merenda... la collego ai pomeriggi a casa al calduccio durante le giornate fredde e piovose... è per me il comfort food dolce per eccellenza... spero vi piaccia :-)


TORTA FRANCESCANA

250 gr farina
1 bustina di lievito in polvere
150 gr di zucchero
150 gr di burro
2 uova
2-3 mele
latte q.b.

Setacciare la farina con il lievito (io ho usato la farina per dolci con lievito).
Lavorare 100 gr. di burro fuso con 100 gr. di zucchero e le uova (io ho usato lo sbattitore elettrico) e continuando a mescolare unire a poco a poco la farina e se necessario un po' di latte per ammorbidire l'impasto e raggiungere la consistenza giusta.
Versare tutto il composto in una teglia imburrata e infarinata (o carta forno) e cospargere la torta con le mele sbucciate e tagliate a fettine. Condire con il burro restante a fiocchetti e cospargere il tutto con lo zucchero che rimane (nella ricetta originale è previsto lo zucchero a velo ma lo zucchero semolato fa formare una crosticina eccezionale!!!).
Cuocere in forno a 180° per 35-40 minuti.

This simple recipe is taken from an old recipe book (I forget the name) and is one of the cakes that most reminds me of childhood ... is the cake that my mom prepared us often for an afternoon snack ... I connect it to afternoons at home in the warmth during cold and rainy days ... for me is the best sweet comfort food  ... I hope you like it :-)


TORTA FRANCESCANA


250 g flour
1 sachet of baking powder
150 grams of sugar
150 grams of butter
2 eggs
2-3 apples
Milk (as necessary)

Sift flour with baking powder (I used cake flour with baking powder).
Work 100 grof melted butter with 100 gr. of sugar and eggs (I used electric mixer) and continue stirring add the flour gradually, and if necessary a little of milk to soften the dough and get the right consistency.
Pour the mixture into a buttered and floured baking pan (or use baking paperand sprinkle the cake with apples, peeled and cut into slicesSeason with the remaining butter in flakes and sprinkle with remaining sugar (original recipe is provided in powdered sugar but the normal sugar forms a crust that is great !!!).
Bake at 180 degrees for 35-40 minutes.

Torta di panettone ricoperta

Ecco finalmente l'esperimento.. il primo tentativo di "pseudo" torta ricoperta con marshmallow fondant...
A dire la verità l'idea originaria era un'altra... e cioè una sorta di tiramisù di panettone... ma poi mi è spuntata l'idea della copertura e quindi ho cambiato anche l'interno... il risultato mi ha sorpreso :-D

TORTA DI PANETTONE RICOPERTA

1/2 panettone tagliato a fette uguali (io ho usato quello senza canditi con uvetta e cioccolato...)
latte e cacao per bagnare le fette
dulce de leche a piacere

Formare uno strato di fette di panettone, bagnare con il latte e spalmare il dulce de leche.
Ripetere gli strati come dalle foto...


Coprire con il marshmallow fondant ed ecco il risultato.... (scusate, la decorazione lascia un po' a desiderare... ma come dicevo è il primo esperimento per me...)


E visto che più riciclo non si può (i marshmallow li ho trovati nella calza della befana... :-P )

Here, finally, the experiment .. the first attempt to "pseudo" cake covered with marshmallow fondant ...
Actually the original idea was another one...  a sort of tiramisu panettone ... but then I checked the idea of the cover and then I changed the inside ... the result surprised me:-D

TORTA DI PANETTONE RICOPERTA

1 / 2 cake cut into slices of the same size (I used the one without candied fruit, with chocolate and
 raisins)
milk and cocoa to wet the slices
dulce de leche to taste

Form a layer of slices of cakepour in the milk and spread the dulce de leche.
Repeat the layers as in the photos ...


Cover with marshmallow fondant and this is the result ... (sorerythe decor isn't so good ... but as I said before this was the first experiment for me ...)

Marshmallow fondant al cacao

Era da tantissimo che ne sentivo parlare e da tanto volevo farlo... ieri approfittando di un po' di tempo a disposizione mi sono buttata... non lo avevo mai assaggiato, ma vedo ovunque torte decorate con questo sistema e mi ispirano un sacco... non so ancora come mi verrà come decorazione... (come gusto può andare).. sto architettando un esperimento, vi saprò dire domani ;-)


MARSHMALLOW FONDANT AL CACAO



2 cucchiai di acqua
65 g di Marshmallow
125 g di zucchero a velo + 1 cucchiaio di cacao amaro
Mettete i cucchiai d’acqua in una ciotola con i marshmallow e sciogliere a bagnomaria finchè i marshmallow saranno fusi e mescolando aggiungere il cacao amaro.
Versate i marshmallow in un altro recipiente e incorporate lo zucchero a velo a poco a poco (io ho usato prima una spatola poi le mani... ) alla fine otterrete una pasta morbida e poco appiccicosa. 


Fate riposare il panetto nella pellicola trasparente da cucina per almeno 24 ore.






Girovagando tra i vari blog sono capitata qui e mi sembra un'idea meravigliosa... andate a dare un'occhiata !!!!!

I've been hearing about it for a long time and I wanted to do ... yesterday, thanks to a little of "spare" time I tried ... I haven't tastedit yet, but I everywhere I see cakes decorated with this system and they inspire me a lot ... I do not know how it'll be as decoration ... (such as taste can go) .. I'm planning an experimentI will tell you tomorrow;-)

MARSHMALLOW FONDANT AL CACAO

2 tablespoons of water
65 g of Marshmallow
125 g of icing sugar + 1 tablespoon unsweetened cocoa powder
Put tablespoons of water in a bowl with marshmallows and melt in a water bath until marshmallows are melted, stirring add the cocoa.
Pour the marshmallow into another container and stir in the icing sugar gradually (I used a spatula first then hands ...) at the end you will get a soft and slightlysticky dough.
Set aside the dough in plastic wrap for at least 24 hours.

Torta "messicana" e SWAP!!

Finalmente riesco a trovare qualche minuto... scusate, è un po' un periodaccio ma passerà :-D !!
Per prima cosa voglio ringraziare la mia compagna del meraviglioso food swap di Cranberry... la bravissima Vickyart  mi ha mandato un sacco di cose buone... la foto non rende e non so se si vede bene... il limone a sinistra era giganteeeeee !!!!!

Tornando alle ricette... ecco l'altra invenzione del cenone-buffet di capodanno...

TORTA "MESSICANA"

1 confezione di pasta brisee
3 zucchine tagliate a pezzetti (e private della parte centrale)
1 cipolla e 1 carota tritate
300 gr. mais (io ho sostituito circa 100 gr con pisellini)
1 uovo
200 ml panna da cucina
grana grattugiato a piacere (3 o 4 cucchiai circa)
sale qb e peperoncino a volontà ;-)
1 cucchiaio olio evo

Soffriggere la cipolla tritata nell'olio, unire la carota e le zucchine e lasciare cuocere.
In una terrina sbattere l'uovo con la panna, qualche cucchiaio di grana e il sale e il peperoncino.
Appena le verdure saranno quasi cotte unire il mais e i pisellini e farli saltare insieme per qualche minuto.
Unirle al composto, versare il tutto nella teglia foderata con la pasta brisee, spolverare con altro grana e infornare a 180° per circa 40-45 minuti.
Eccola prima e dopo, pronta per il cenone.....

Returning to the recipes ... here is another invention of the New Year's Eve dinner-buffet ...
TORTA "MESSICANA"

1 box of pasta brisée
3 zucchini cut into small pieces (and without the central parts)
1 chopped onion and 1 carrot
300 grcorn (I substituted about 100 gr with peas)
1 egg
200 ml cream
grated Parmesan cheese to taste (about 3 or 4 tablespoons about)
salt and chilli at will;-)
1 tablespoon olive oil 


Saute the onion in the oil, add the carrot and zucchini and cookIn a bowl beat the egg with the creama few tablespoons of Parmesan and salt and chilliAs soon as the vegetables are almost cooked, add corn and peas and toss them together for a few minutesAdd to the mixture, pour it into the pan lined with dough briséesprinkle with morecheese and bake at 180 degrees for about 40-45 minutes
Here it is before and after, ready for dinner ....

Torta salata con pancetta e patate

Purtroppo il 2012 non è iniziato nel migliore dei modi.... speriamo che andando avanti migliori...
E così trovo solo ora il momento di pubblicare alcune delle cose preparate per il cenone del 31/12...
A parte l'immancabile polpettone di tonno mi sono buttata (tanto per cambiare... le adoroooo) sulle torte salate.... ecco la prima...

TORTA SALATA CON PANCETTA E PATATE

1 confezione di pasta brisee
150 gr. pancetta affumicata a dadini (io ho sostituito circa 50 gr con del classico salamino sempre a dadini)
5 patate medie pelate e tagliate a dadini
3 uova
5 cucchiai di parmigiano grattugiato (+ 1 per la spolverata finale)
1 noce di burro
latte, rosmarino e pepe q.b

Sciogliere la noce di burro in una padella e far saltare la pancetta (il salame lo ho aggiunto solo alla fine) per qualche minuto. Unire le patate, condire con pepe e rosmarino e cuocere aggiungendo acqua se necessario.
In una ciotola abbastanza capiente sbattere le uova allungate con un po' di latte e il parmigiano.
Quando le patate saranno quasi cotte (non devono schiacciarsi, devono rimanere sode e conservare la forma) unirle al composto nella ciotola e amalgamare.
Versare tutto in una teglia rettangolare foderata con la pasta brisee e infornare a 180° per circa 40 minuti.
Ecco il risultato già pronto per il buffet.....

Unfortunately, 2012 is not started in the best way .... hoping it'll be better going forward ...
And so I find only now a little of time to publish some of the things prepared for the dinner of 31/12 ...
Apart from the inevitable "polpettone di tonno" I made (as usual ... loooove them) some pies .... here is the first one...

TORTA SALATA CON PANCETTA E PATATE

1 package of pasta brisée
150 gr. diced smoked bacon (I used 100 gr of bacon and 50 gr of the classic salami, always diced)
5 medium potatoes peeled and diced
3 eggs
5 tablespoons grated Parmesan cheese (+ 1 for the final gratin)
1 knob of butter
milk, rosemary and pepper q.b

Melt the butter in a frying pan and sauté the bacon (I added the salami at the endfor a few minutes. Combine potatoes, season with pepper and rosemary and cook adding water if necessary.
In a large bowl beat the eggs with some milk and Parmesan.
When the potatoes are almost cooked (they must remain firm and keep shapeadd to the mixture in the bowl and mix.
Pour into a rectangular pan lined with pastry and bake at 180 ° for about 40 minutes.
Here it is  the result ready for the buffet .....
