Lussekatter

I tempi dell'università sono piuttosto lontani quindi mi rimane molto poco del "Jag har studerat Svenska" ecc... :-( ma ho deciso, prima o poi riprendo i libri e faccio un mega-ripasso!!
E dopo aver studiato lo svedese e la letteratura di tutto il nord Europa (che io amo) qualche anno fa finalmente sono stata a Stoccolma... e nel periodo magico, proprio per S.Lucia!!!! Purtroppo non ha nevicato, sarebbe stato ancora più "tipico", ma alla fine meglio così per due camminatori "folli"!!!


Ovviamente girando tra le bancarelle dei mercatini non potevamo non assaggiare i famosi Lussekatter (o Lussebulle) o panini svedesi allo zafferano... il nome, che viene tradotto come "gatti di S.Lucia", secondo una leggenda sembra far riferimento a Lucifero che con le sembianze di gatto cercava di confondere dei bambini mentre Gesù (con le sembianze di un bambino) distribuiva loro queste brioscine che grazie al colore acceso proteggevano dall'oscurità del male.
Ecco perchè, durante il giorno di S.Lucia ci sono così tanti cortei di bambini vestiti di bianco che portano queste brioscine cantando!
Il profumo di queste brioscine è particolare ma è uno degli aromi che associo di più a quel viaggio... ovviamente quelle mangiate lì erano molto più buone e profumate... prossima volta ;-D

LUSSEKATTER

350 gr farina (io ho usato 250 gr di farina 00 e 100 gr di manitoba)... potrebbe servirne un pochino di più alla fine se l'impasto risulta appiccicoso
100 gr zucchero
125 ml di latte
12 gr di lievito di birra (da sciogliere in qualche cucchiaio d'acqua con mezzo cucchiaino di zucchero)
60 gr. burro
1/2 bustina di zafferano
1 uovo (meno un po' di tuorlo che servirà con un po' di latte per spennellare i panini)
cioccolato fondente (la ricetta originale prevede l'uvetta ma qui è odiata... quindi ho improvvisato)

Sciogliere il burro e poi unirlo al latte, una volta tiepidi unire lo zafferano. 
Versare tutto in una ciotola e continuando a mescolare unire un po’di farina fino ad ottenere una pastella densa ed omogenea. Aggiungere il lievito sciolto nell'acqua e lo zucchero, l’uovo, la restante farina e continuare ad impastare.
Lasciare lievitare fino a quando il volume non sarà raddoppiato (1 ora e mezza o 2). 
A questo punto lavorare brevemente l'impasto e formare delle "S" arrotolando le estremità a spirale (con queste dosi a me sono venuti circa 12 dolcetti), disporli in una teglia, infilare un pezzetto di cioccolato al centro delle spirali e far lievitare coperti finchè raddoppiano. 
Spennellare i panini con l’uovo (e/o il latte) sbattuto ed infornarli a 180° per circa 20-30 minuti (fino a quando saranno dorati). 

Visto il clima natalizio....

But now I've decided, sooner or later I'll come back to my books!
And after studying Swedish and Northern Europe literature (which I love) a few years ago finally I saw Stockholm ... and in a magic period, just in the day of St. Lucia!! Unfortunately it didn't snow, it would have been even more "typical", but in the end it was better in this way for two hikers very "crazy"!


Obviously, running between Christmas market stalls we could taste the famous Lussekatter (or Lussebulle) or Swedish saffron buns ... their name, which can be translated as "St.Lucia cats", according to a legend seems to refer to Lucifer that in the guise of cat was trying to confuse children as Jesus (in the guise of a child) was distributing them these buns to protect them from the darkness of evil thanks to the bright color of saffron.
That's the reason why, during the days of St. Lucia there are so many processions of children dressed in white carrying these buns singingThe scent of these buns is special but it is one of the flavors that I associate more on that trip ... Obviously thore were better than mine... Next time I'll'improve myself ;-D

LUSSEKATTER

350 gr flour (I used 250 gr of flour 00 and 100 gr of Manitoba) ... you may need a little more in the end if the dough is sticky
100 gr sugar
125 ml of milk
12 gr of yeast (dissolved in a few tablespoons of water with half a teaspoon of sugar)
60 gr. butter
1 / 2 sachet of saffron
1 egg (a bit of yolk will serve with a little of milk for brushing the buns)
dark chocolate (the original recipe includes raisins but here they are hated ... so I improvised)
Melt the butter and then add it to milk, when warm add the saffron.
Pour into a bowl and keeping stirring add a bit of flour until everything is homogeneous. Add yeast dissolved in water and sugar, egg, remaining flour and continue mixing
Let rise until it will be doubled in volume (about 1 hour and a half or 2).
Then work the dough briefly and form some "S" rolling spiral ends (with these doses I made about 12 buns), arrange them in a pan, slide a piece of chocolate in the center of the spiral and allow to rise covered until doubled.
Brush the buns with the egg (and / or milk) and bake at 180 ° for about 20-30 minutes (until they are golden).

    Che bella deve essere stoccolma, ci manca e vorremmo tanto visitarla!

  4. Eh già... ma folli davvero, non so dirti in quale città abbiamo fatto più km a piedi! Stoccolma è un sogno.. nel periodo natalizio è magica ma è stupenda anche d'estate, quando ci sono molte più ore di luce!!! Vi auguro di visitarla presto :-D Baci
